1-⅔ c flour
⅓ c powdered sugar
1 tsp vanilla
¾ cup butter, softened

Lightly spoon flour into measuring cup and level off. In a medium bowl combine the first 4 ingredients. Blend well. Chill dough. Heat oven to 350ºF. Shape dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheet. With thumb or forefinger, make imprints in center of each cookie. Bake 8 to 10 minutes until lightly browned. Cool.

1 egg, beaten
⅔ c sugar
2-3 tsp grated lemon peel
1 tsp cornstarch
1 tsp salt
3 tbsp lemon juice
1 tbsp butter or margarine
coconut or powdered sugar

Directions:
Directions:
In a medium saucepan, combine ingredients for the filling, except the coconut and/or powdered sugar. cook over low heat, stirring constantly until smooth and thickened. Cool. Top each cookie with 1/4 tsp of the filling. Sprinkle with coconut or powdered sugar. Store in single layers, loosely covered.
