1/2 c. small pearl tapioca
1/3 c. sugar or 10 Spenda packets
3 c. milk
1/4 t. salt
2 eggs, lightly beaten
1/2 t. cinnamon
1 t. vanilla
1/2 c. raisins
2 cups water

Directions:
Directions:
Soak tapioca in 2 cups water for a few hours at room temperature. To a saucepan add drained tapioca, milk ,sugar or Splenda and salt to the 1 3/4 c. saucepan. Cook at medium, stirring often as not to burn, until it starts to thicken. Should coat the back of a spoon.Whip the eggs in a seperate bowl. When thickenen add 2 T at a time twice of the milk mixture,to the eggs to temper. Then add the eggs to the milk mixture and reduce the heat to simmer and cook for about 5 min. stirring to thicken and so it will not burn. Add the raisins. Fill 6 ramikins or pudding dishes. Chill until serving. Can top with a dollup of whipped cream at service if you like.
