Grandma's Chicken Soup |

Ingredients: |
Ingredients: 1 Whole chicken or about 5lbs. of chicken pcs. 1 Large onion, sliced 2 Carrots, coin sliced 2 Stalks Celery, coin sliced about same thickness as carrots Salt and pepper to taste

Directions: |
Directions:Put chicken in a large pot cover with water and bring to boil. Skim the scum and reduce the heat to simmer. Soup should have a little bubble. Add the vegetables. Simmer skimming as needed, for about two hours |

Nana's liver dumplings |

Ingredients: |
Ingredients: 1lb. Chicken liver, ground twice 1 large Egg 1 clove Garlic, small, minced 1t Salt 1 1/2c Breadcrumbs or matzo meal Milk to release if too tight pepper to taste

Directions: |
Directions:Combine all the wet ingredients. Add the breadcrumbs and mix to form a dough. If too tight add a little milk
In a large pot, bring water to boil. Using a teaspoon make small balls and drop into boiling water. Cook for about 15 minutes. |

Notes: I put these recipes together because Grandma made the best chicken soup and my very first food memory was when we first started going to dinner at Nana's she would serve a soup course with the liver dumplings. They were a favorite. I was told Nana's broth was Collagen, but I thought this could be fun to do together. I also took some license with the liver dumpling recipe this is Mrs. Grossinger's from her Cookbook dated the 1960's.
