1 cup unsalted butter, browned (see note)
1/2 cup sugar
1 and 1/2 cups dark brown sugar
1tbsp plain Greek yogurt
2tsp vanilla
Mix all that so it’s well incorporated and kinda creamy looking
1 whole egg and 1 egg yolk
2 1/2 cups flour
1/2 tsp baking soda
1/4 tsp salt

Mix brown sugar, granulated sugar, eggs, yogurt and vanilla until well incorporated.

Sift the dry ingredients into the wet a portion at a time ( I added it 3 times and mixed in between)

Fold in chocolate chips as desired

To fill them I used a cookie scooper and then flattened until about a quarter inch thick and put a little scoop of the filling. I used soft caramel candies for one, peanut butter, and then a third batch with Nutella!!

To make brown butter (also called beurre noisette), simply start melting butter over medium heat. Use a pan with a light-colored bottom so you can keep track of the color. Swirl the pan occasionally to be sure the butter is cooking evenly.

As the butter melts, it will begin to foam. The color will progress from lemony-yellow to golden-tan to, finally, a toasty-brown. Once you smell that nutty aroma, take the pan off the heat and transfer the browned butter into a heat-proof bowl to cool.
