1 lb. large, deveined, cooked shrimp (cut in half)
1 lb. spaghetti
salt and pepper
2/3 cup EVOO
2/3 cup grated parmesan cheese
1 T. grated lemon zest (1 large lemon)
1/2 cup fresh or bottled lemon juice (2 large lemons)
1/3 cup chopped fresh basil
2 T. fried capers

Directions:
Directions:
Cook pasta al-dente in salted water. Drain, reserve 1 cup of the pasta water.

Whisk the EVOO, parmesan, lemon zest and lemon juice in bowl to blend.

Toss the pasta with the sauce and pasta water, adding the pasta water as needed. Season with salt and pepper. Stir in basil, fried capers and top with more parmesan cheese.

How to fry capers:
Drain, rinse and dry the capers very well. Heat oil in skillet over medium-high heat. Add capers and fry for about 2 minutes, or until they have popped open and are golden brown. Drain on paper towel.
