5 lbs red potatoes
2-3 bunches of celery, depending on size
1-2 onions
1 cup small dice red pepper
1/2 - 1 cup small dice green pepper

Dressing:
2 1/2 cup vegenaise mayo
1/3 + cup mustard
1 good tbl celery seed
1 1/2 cup sweet relish
2 1/2 tbl sugar

Directions:
Directions:
Clean potatos, do not peel, and cook until WELL done

CHILL OVERNIGHT!

Dice potatoes, chop celery, onions, peppers and mix in bowl.

Make dressing in separate bowl - mix mayo, mustard, celery seed, relish and sugar.

Add dressing to potato mixture. Stir to combine.

Chill for several hours.
