1 c roasted, salted macadamia nuts
1 c coconut
1 t vanilla
1/4 c melted coconut oil
1 T maple syrup

Filling:
jelly, jam or ganache
3 T melted coconut oil
2 T maple syrup
1 T cocoa powder
1 T palm shortening
2 T arrowroot starch

Directions:
Directions:
Pulse macadamia in food processor until forms a coarse meal. Add remaining cookie ingredients and pulse 30 seconds. Scoop by rounded tablespoonfuls onto waxed paper lined baking sheet. Press thumb into each ball to create a well. If too soft, refrigerate 15 minutes.

Make filling, mix until fluffy. Put ganache in center of cookie. Refrigerate 1 hour until firm.
Store 2 weeks in fridge or freeze 3 weeks.
