5-6 very ripe bananas
2 large eggs
1½ teaspoons baking powder
1½ teaspoons baking soda
3 cups flour
½ cups sugar
½ chopped pecans
½ cup unsalted butter
1 cup buttermilk

Directions:
Directions:
1. Preheat oven to 300º

2. Sift flour, salt, baking powder and baking soda

3. Add pecans, set aside

4. In a separate bowl, cream sugar and butter well

5. Mix in eggs, one at a time

6. Add bananas

7. Add dry ingredients and buttermilk, alternating until incorporated. Do not overmix

8. Bake in loaf pans buttered or sprayed with Pam spray, for one hour or until toothpick comes out clean
