Ground meat
Egg
Salt
Pepper

Vegetables
Carrots
Celery

Ordinary white sandwich bread
Eggs
Crisco vegetable shortening
Salt

Directions:
Directions:
Meatballs. Mix all ingredients. Refrigerate an hour or more. Roll small meatballs, about the size of a small marble. Bake in 350º oven until cooked. Drain to remove excess fat.

Dice celery and carrots. Boil (each by themselves) until almost soft. Drain

Add meatballs and vegetables to broth.

For croutons. Cube bread, in 1/8 inch cubes. Toast in oven until lightly browned. Cool. Break 3 eggs in bowl with salt, whisk, add bread and coat. Melt about 1 T Crisco in pan, add bread and cook until bread is soft and all egg has been absorbed. Repeat as needed until all bread is cooked.
Serve croutons with the soup. Guests will put their desired amount in their own soup.
