6 medium potatoes (about 2 pounds)
1/2 cup sliced cucumber
1/3 cup sliced green onions
1/3 cup chopped celery
1 tbsp chopped green peppers

Horseradish-Caraway dressing
Paprika

Horseradish-Caraway Dressing

1/3 cup mayonnaise
1/3 cup sour cream
4 teaspoons white vinegar
2 teaspoons horseradish
1 tsp Worcestershire sauce
1 tsp caraway seeds
1 tsp salt
1/2 tsp dry mustard
1/4 tsp sugar
1/4 tsp pepper

Combine all and stir into potato/vegetable mixture. Sprinkle with paprika.

Cook potatoes in 2 inches of water. Cool. Combine dressing ingredients while potatoes cook. Cube potatoes into 3/4 inch cubes. Mix all vegetables with dressing. Refrigerate until fully chilled.
