8 ounces cream cheese, softened
1 cup butter
2 cups flour
Pinch of salt

In a mixer cream butter and cream cheese until well blended. Add in flour and salt until thoroughly incorporated. Cover and chill for at least 1 hour.

11 ounces dried apricots
Water
¾ cup sugar

Directions:
Cut apricots into ¼-inch pieces and place in a heavy pot. Cover with water and cook uncovered over moderate low heat until apricots are soft. Remove from heat and stir in sugar. Cool before using.

To fashion cookies: Using only a small amount of dough at a time (keep rest of dough refrigerated), roll out dough until ⅛-inch thick. Cut into 2-inch squares. Put ½ teaspoon of filling in the center of each square. Fold opposite corners together and seal.

Bake at 350°F on an ungreased cookie sheet for 20 minutes until edges slightly brown. Keep in a tightly sealed container.
