1/4 cup White Rice Flour
1/4 cup Brown Rice Flour
1/3 cup Tapioca Starch
1/3 cup Cocoa Powder
1/4 tsp. Salt
1/4 tsp. Baking Soda
3/4 tsp. Xanthan Gum
1/4 cup Butter, melted
1/2 cup PLUS 2 Tbsp. Dark Brown Sugar, firmly packed
1/4 cup Sugar
1 tsp. Vanilla
1 large Egg PLUS 1 Yolk, room temp.
1/2 cup chopped Walnuts
1 cup Semi-Sweet Chocolate Chips

Mix flours, cocoa powder, salt, B. soda, Xanthan gum and mix well. Set aside.
In another bowl add brown sugar, reg. sugar & mix well. With mixer add melted butter and blend well.
Add in 1 egg, yolk and vanilla into sugar mixture. Mix on med. speed until batter is a light color.
Add sugar mixture into flour mixture and mix with blender. Start on low until flour is incorporated then mix on med. speed, scrap down bowl and continue to blend.
Fold in walnuts & chocolate chips. Refrigerate for 30 min.
Spoon out with cookie scoop.
Bake at 350ºF. for 11 minutes. Remove cookies from pan and let cool on rack (they will be soft).
