2 lbs fresh shrimp
1 large onion chopped
1 clove garlic, minced
4 stalks celery chopped
2 Tbls salad oil
1 2½ can crushed or diced tomatoes
Salt and pepper
2 bay leaves
1 sprig thyme
Dash or tobacco sauce
2 cups uncooked rice

Directions:
Directions:
Brown onion, garlic and celery in hot salad oil.
Add tomatoes, seasonings and tabasco sauce
Cook 40 minutes
Add shrimp and cook 10 minutes.
Cook rice in boiling, salted water. Drain and rinse with hot water. Rinse and drain again.
Add ¼ cup melted butter, salt and pepper. Pack firmly in 10 inch greased mold ring.
Let stand 30 minutes in a pan of hot water in moderate oven (350º).
Unmold on hot platter and fill with shrimp creole.
