6 medium potatoes
6 slices bacon
3/4 c. onions, chopped or thinly sliced
2 T. flour
1-1/2 tsp. salt
1/2 tsp. celery seed
Dash of pepper
3/4 c. water
1/2 c. vinegar
Parsley or chives, minced

Directions:
Directions:
Boil potatoes with their skins until tender; peel and slice thinly into bowl. Fry bacon until crisp; remove from fry pan and add onion and cook in bacon fat until yellow. Mix in the flour, salt, celery seed and pepper; gradually stir in water and vinegar. Cook until mixture boils, stirring constantly. Boil for 1 minute. Pour over potatoes; add the crisp bacon, broken into pieces. Serve in a large bowl garnished with pieces of the crisp bacon and minced parsley or chives.
