6 med potatoes
1/4 cup veg oil
1/4 cup cider vinegar
1 medium onion
3 hard cooked eggs
2 1/2 tsp slat
1/4 tsp pepper
3/4 cup mayo
1/4 cup light cream
1 cup chopped celery

Directions:
Directions:
1. Cook potatoes until tender in salted water, drain, peel taters and slice into thin slices put in large bowl.

2. Combine oil, vinegar, onion (cooked if desired), salt and pepper into mason jar and shake to mix pour over taters and toss to blend. Cover bowl and chill at least 3 hours.

3. Just before serving add diced celery and eggs then; stir mayo and cream in small bowl until smooth and pour over taters and toss to coat.
