1 pound (500 grams) or (3 cups) Orzo (or whatever pasta you'd like)
2 tbsp. Olive Oil
1 400 gr. container Feta Cheese, crumbled
1 Red Pepper, chopped
1 Yellow Pepper, chopped
1-1/2 cups pitted Kalamata Olives (or just black olives)
2 tbsp. Capers, drained
1/2 cup sundried tomatoes, chopped
½ of medium red onion, chopped

½ cup Olive Oil
4 tbsp. lemon juice
1 tbsp. white wine vinegar
2 tbsp. minced garlic
2 tsp. dried oregano
4 tsp. dried mint
½ cup fresh Dill (or 4 tsp. dried dill)
2 tsp. Dijon mustard
1 tsp. salt
1/2 tsp. pepper

3 tbsp Pine Nuts, toasted (optional)

Cook pasta in large pot of boiling salted water until tender, but still firm to bite. Drain. Rinse with cold water; drain well. Transfer to large bowl. Toss with a couple of tbsp. of olive oil. Add crumbled feta cheese, chopped bell peppers, sundried tomatoes, Kalamata olives, red onion and capers.

Combine lemon juice, vinegar, garlic, oregano, mint, dill, and mustard in small bowl. Gradually whisk in ½ cup olive oil. Season with salt and pepper. Add dressing to Orzo mixture and toss to blend. Sprinkle with pine nuts. Can be prepared the day ahead, it just gets better with time. Garnish with pine nuts and ENJOY!!
