FOR THE CRUST

1 1/2 C GF flour like Bob’s Red Mill
1/2 C finely ground almond flour
1/2 C powdered sugar
2 sticks cold butter
1/8 tsp salt

FOR THE FILLING

1 3/4 C granulated sugar
6 T fresh squeezed lemon juice
4 large eggs
1 T lemon zest (1-2 organic lemons)
1/4 C GF flour

Preheat oven to 350º. Grease a 9X13 pan with softening or butter. Set aside. Make crust by mixing flours,powdered sugar, and salt in a medium size mixing bowl. Cut in butter with a pastry cutter until small pea size pieces of dough form. Dough will be crumbly and somewhat dry. Dump dough into pan and spread evenly. Gently press with tips of fingers or back of spoon to make even. Bake for 18 minutes. Remove from oven and set on cooling rack. Allow crust to cool completely to touch or it will become soggy.

Make filling. Whisk all filing ingredients together until smooth. Pour over cooled crust. Jiggle to remove air bubbles. Bake for 25-30 minutes until golden brown at the edges.

Loosen edges with a sharp knife and cut into squares. After cutting sprinkle with powdered sugar. Serve chilled or at room tempurature. Store in air tight container in refrigerator. Can freeze for up to 3 months.
