10 medium cucumbers (5 pounds)
8 cups sugar
2 Tablespoons pickling spice
4 teaspoon salt
4 cups vinegar

Directions:
Directions:
Cover whole cucumbers with boiling water; let stand overnight. Drain and repeat for 3 more days. On the 5th day, drain and cut into bite size chunks. Combine remaining ingredients and bring to a boil. Pour over cucumber chunks. Cover and let stand for 2 days. Bring mixture to a full boil. Fill hot, scalded jars to 1/2 inch of top. Adjust jar lids. Process in hot water bath for 5 minutes. Start timing as soon as jars are placed in water. Makes 9 pints.
