6 Yam Sweet Potatoes
3 C. Domino Sugar
1 lb. Butter
4 Eggs
3 Tbsp.McCormick Vanilla Extract
3 1/2 Tbsp. McCormick Lemon Extract
4 Tbsp.McCormick Coconut Extract
4 Deep Dish Pet Ritz Pie Crust
1/4 Tbsp. Flour ( if crust made from scratch , evenly distribute on pie crusts bottom)
1/4 Tsp. Salt

Place sweet potatoes in large pot , add 5 c. water and cook 1 1/2 hours ( until well done ) place butter on counter immediately as potatoes are cooking allowing butter to slightly soften , if pie crust is frozen , remove from refrigerator at least 1 hour prior to use to allow time for complete thaw , when potatoes are done , drain liquid from pot and add butter and sugar , beat eggs very well and gradually add eggs to mixture while continuing to stir, when potatoes, butter , sugar and eggs are well mixed add vanilla , lemon , coconut extract and salt , stir thoroughly and taste . It's ok if you choose to add more sugar etc. (depends on preference) preheat oven to 330 -340 ( depending on oven ) fill pie crust to the level you choose , if crust made from scratch evenly sprinkle crust bottoms with flour , bake for 1 3/4 hours , until you are sure of your oven time ,check pies after 1 1/2 hours , when pies are done crusts are medium brown and filling is firm. Remove from oven and leave uncovered until cool (approximately 3 hours ) the pie can be served slightly warm but DO NOT cover pies until they have cooled for minimum 12 hours . Covering pies before they are completely cool will result in soft crusts .
