1 c. butter, softened
1 c. sugar
1 c. packed dark brown sugar
2 eggs
2 tsp. vanilla extract
3 c. flour
1 tsp. baking soda
2 tsp. hot water
½ tsp. salt
2 c. butterscotch chips
1 c. chopped pecans

Directions:
Directions:
Preheat oven to 350° F. Cream butter and sugars until smooth. Beat in the eggs one at a time, then stir in vanilla. Dissolve the baking soda in hot water and add to batter along with salt. Stir in flour, butterscotch chips and nuts. Drop by tablespoons onto ungreased cookie sheets. Bake about 10 minutes until edges are lightly brown but center of cookie is soft. Wait 1 minute then move cookies to wire rack to cool completely.
