1 Egg, lightly whipped
3 Bananas, mashed
¼ cup Peanut Butter, heated till soft
¼ cup Honey
1 tsp Vanilla Extract
2 ½ cups Quick Oats with Oat Bran
½ bag Cinnamon Chips

Directions:
Directions:
1. Mix egg, bananas, peanut butter, honey, and vanilla.

2. Stir in oats and mix well. Add cinnamon chips, mix.

3. Scoop 1 Tbsp. per cookie on a baking sheet and flatten with a back of a spoon.

4. Bake at 375° for 8-12 minutes or until bottoms are golden brown.

These do not spread out as they cook, they pretty much retain whatever shape they are in so flattening them are important for even cooking. These make great quick-grab breakfast or lunch replacement bars without all the sugars that can be in the store-bought box kind. Play around with it, add raisins, cherries, dried cranberries, nuts, etc.
