2 sticks of butter
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
2 eggs
1 tsp. vanilla extract
1/4 c. corn starch
1/4 cup almond flour
1-1/4 c. one-for-one gluten free flour (King Arthur, Bob's Redmill, etc.)
1 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. salt
3 c. oats (rolled, old fashion, or quick)
1 c. raisins

Directions:

Heat oven to 350ºF.
In stand mixer, cream butter and sugars on med/high speed until light in color and fluffy.
Add eggs one at a time, mix well.
Add vanilla extract and mix well.
Combine corn starch, flours, baking soda, cinnamon, and salt and mix well.
Add oats followed by raisins and mix until distributed evenly.
Drop dough balls (using a cookie scoop or two spoons) onto prepared cookie sheet.
Bake 8-11 min (depending on size).
Allow cookies to cool on cookie sheet for a few min then remove to wire rack until completely cool
Store in air tight container.
