1 deep dish pie crust (get a quality name brand)
1 cup cheddar cheese
1 cup swiss cheese
1 heaping cup ham (or whichever meat desired)
3 large eggs (+1 egg if they aren't very big)
1/2 cup of half and half
1 tbsp lemon zest
1 tsp dry mustard
1/2 tsp white pepper
1 tsp salt

Cook pie crust according to instructions. Mix everything in a big bowl. Carefully pour it into the cooled pie crust. Bake at 350º for 1 hour.
