2 cups brown sugar
4 eggs
1-½ cups vegetable oil
¾ cup nuts
3 cups flour
¾ teaspoon salt
2 teaspoons cinnamon
2 teaspoons baking soda
3 cups grated zucchini
Mini chocolate chips (optional)

Ingredients for topping:
1 cup brown sugar
½ cup butter
1 egg
1 cup nuts
1 cup coconut

Directions:
Directions:
1. Mix brown sugar, eggs, oil, nuts, flour, salt, cinnamon, soda, and zucchini in a bowl.
2. Beat well.
3. Spray with Pam cooking spray.
4. Bake at 350º for 35 minutes.
5. 10 minutes before done, top with mixture of brown sugar, butter, egg, nuts and coconut.

This is found in the Krack/Hughes cookbook. I've never tried it before, but will this summer. (2019) I misplaced my zucchini recipe.

1/2020 Jasmine has been on fire! She had extra zucchini from a Veggie Pizza she made and wanted to use it up. She asked about zucchini bars, and Mom suggested this recipe. Alayna was quite skeptical throughout the process, but decided to try a piece after she was lured in by the smell of freshly baked bread. She hates most vegetables but said it tasted like pumpkin bars to her. However, when she spotted a piece of grated zucchini, she pulled it out and set it aside. Jasmine told her to eat it anyway because she'd already been eating it. She did and was pleasantly surprised. She ate about a third of the square pan. It reminds us of Sheana's Sour Cream Banana Bread recipe.

Jasmine reached out to Grandma Margee and Auntie Ginia to let them know she tried Great Grandma Eunices's recipe and that she was thinking about them. Granbdma said she would do some looking for more recipes from the other Grandma. She also said Jasmine was such a treat. Auntie 'Ginia said that she still likes to use the Krack/Hughes cookbook. She said that she recently used the cookbook to look up someone's birthday instead of a recipe.
