Pastry for 2 crust pie

1 tsp. lemon juice
4 - 6 c. rhubarb

1 ½ c. sugar
⅓ c. flour
¼ tsp. salt
¼ tsp. cinnamon
1 tbsp. butter

Directions:
Directions:
Dice rhubarb to preferred size and toss in lemon juice. Put bottom crust in pie pan. Combine sugar, flour, salt, and cinnamon in bowl. Cover bottom of pie crust with ¼ flour mixture. Cover with a layer of rhubarb mixture. Cover with ¼ flour mixture. Cover with a layer of rhubarb mixture. Cover with ¼ flour mixture. Cover with the rest of the rhubarb mixture. Cover with the rest of the flour mixture. Cut butter into six parts and dot flour mixture with butter. Put on top pie crust, sealing edges all around and cutting plenty of steam vents. Bake at 350 º for 45 minutes. Remove pie from oven and melt 1 tbsp. of butter over top crust. Sprinkle top with ¼ c. sugar. Return to oven for 10 more minutes.
