2 large cucumbers
Onion optional
Cherry tomatoes optional
2 Tbsp Sour cream
2 Tbsp Vinegar
Salt
Pepper

Directions:
Directions:
Peel cucumbers and then slice using a grater so that slices are very thin. In a bowl, after a layer from half a cucumber, sprinkle the layer with salt- do not be stingy with the salt. Continue steps after each half of cocumber is sliced. Cover and let set for an hour.
Using your hands, squeeze the cucumbers so that the juice is released from them.
Mix in the vinegar and sour cream into the cucumber mix. Add salt and pepper to taste.

You may add thinly sliced onions and/ or sliced cherry tomatoes to the mix. This may require an additional amt of sour cream and vinegar.

This is a wonderful light salad that goes with many things. Make sure the cucumbers sit an hour to let the salt work to release the cucumber juice.
