Mexican Meatloaf Recipe

1-1/2 lb. uncooked lean, (7% fat) ground beef
1 c. rolled oats
1 med. chopped onion
1/2 tsp. garlic powder
1 tbsp. chili powder
1 4oz can green chili's, mild, diced
2 tsp. ground cumin
1 8oz can tomato sauce

Preheat oven to 375*F, Coat a loaf pan with cooking spray. Combine all ingredients together, except 1/2 of tomato sauce, setting other half aside. Spoon meatloaf mixture in pan. Bake 1 hr. Spoon remaining sauce over meatloaf and cook 5 more minutes. (Freezing and thawing instructions: If freezing, bake meatloaf for 60 minutes only. Cool completely, remove from pan, wrap in foil and freeze. When ready to eat, thaw in refrigerator. Reheat in oven at 350*F for 30 minutes. Top with 1/2 can tomato sauce and bake 5 more minutes.
