1 cup shortening
2 cups brown sugar
1 egg well beaten
1 cup molasses
4 cups flour
2 tsp baking soda
½ tsp salt
2 tsp ground ginger
1 tsp vanilla
1 tsp lemon extract

Directions:
Directions:
Beat together shortening, brown sugar, egg, and molasses until light and fluffy. Sift together flour, salt, soda, and ginger. Blend dry ingredients gradually into creamed mixture. Add vanilla and lemon. Dough should be soft but not too sticky or it won't crack on top. Chill dough about 4 hours or overnight. Shape into 1 ½ inch balls. Dip top in sugar. Place on greased cookie sheet. Do not flatten. Bake at 350 degrees for 12 to 15 minutes. Watch while baking. Do not get too brown around the edges. Don't let dough warm up while putting on cookie sheet. Used cool sheet.
