11 graham crackers
1/2 c, powdered sugar
1 tsp. cinnamon
6 Tbsp. butter

Filling:
1/2 c. freshly squeezed lemon juice (about 2-3 lemons)]1 tsp grated lemon rind
2 eggs separated (whites from yolks)
1 14 oz. can Eagle Brand Sweetened Condensed Milk


Meringue:
2 egg whites
1/4 tsp. cream of tartar
4 Tbsp. powered sugar
1/2 tsp. vanilla

Crust:

Using Cuisinart or blender, mix 6 Tbsp of butter with 11 graham crackers, 1/2 c. powdered sugar, and 1 tsp cinnamon.

Distribute evenly in pie plate and press with another pie plate to compact.
Cook at 350º for 10 minutes or till brown. (If you want it crispier bake longer) COOL.
Gram Deaver didn't bake hers at all.

Filling:
Put whites aside. With an electric mixer, blend all the other ingredients for the filling. Pour into a cool crust.

Meringue:
Beat 2 egg whites and 1/4 tsp. tartar till stiff, not dry. Peak lean over when beater removed.

Beat 4 Tbsp. of powdered sugar into the white ONE Tbsp. at a time. Add 1/4 tsp. vanilla.

Spread on pie, completely, sealing edges.

Bake at 350º 15 minutes till meringue is brown.

Cool completely.
