Ingredients for bars:
2 cups sugar
16 ounces pumpkin (homemade, preferably)
2 cups flour
¾ cup oil
4 eggs
2 teaspoons baking soda
2 teaspoons cinnamon
¼ teaspoon cloves

Ingredients for frosting:
8-ounce package cream cheese, softened
4 cups powdered sugar
1 Tablespoon milk
1 teaspoon vanilla

Directions for bars:
1. Mix all of bar ingredients together.
2. Beat well.
3. Bake at 350º for 30-35 minutes.
4. Frost with cream cheese frosting.

Directions for frosting:
1. Beat cream cheese, milk and vanilla on low speed till smooth.
2. Beat powdered sugar in, 1 cup at a time, till of spreading consistency.

Tried on 7-17-05 with homemade frozen pumpkin pie filling from our garden. Really moist. Wendell says it is too sugary. Cousins (Micheal, Razzi, Tareq, and Alesha) devoured a pan. Razzi LOVES pumpkin. :) Mindy loves the frosting. :)

Grandma Siegel suggested lightly frosting it shortly after it came out of the oven to seal in moisture. Then, once it has cooled down, spread on the rest of the frosting. Mmm! Right on, Grandma!
