3 c. flour
1/2 c. extra virgin olive oil
1 c. warm water
1 package of dry yeast
1 T. kosher salt
1 T. coarse black pepper
1 T. anise

Directions:
Directions:
Dissolve yeast in warm water. Place all the dry ingredients in a large bowl and mix to combine. Make a large well in the center. Add the oil and water with yeast into the well. Mix with a wooden spoon, then knead until smooth. Let dough rest for about 15 minutes.

Preheat oven to 400º. Line baking sheets with parchment paper. Roll a walnut size piece of dough into a long thin pencil shape. Then, cut into 2 inch pieces and form the dough into a circle or fold in half and twist it into a braid. Make sure you twist tight and pinch the ends together so they don’t come apart when cooking. Place on prepared baking sheet and bake for 18-20 minutes, until golden brown.

These Italian favorites are a crunchy cookie good for dunking in a cup of coffee in the morning, or with wine and cheese at night. They are also a great holiday gift. You can easily double this recipe; if you do, don’t double the salt or yeast. I like to add extra pepper and anise when I make them.
