3/4c erythritol
3/4c butter (1-1/2 sticks)
1Tbsp molasses (optional)
2tsp vanilla
4 eggs
2-1/2 c almond flour
2tsp baking powder
2tsp cinnamon
1/2tsp salt
2-1/2 c grated carrots
1c chopped pecans

ICING
8 oz cream cheese, room temperature
1 stick butter room temperature
1c powdered erythritol
1Tbsp vanilla

Directions:
Directions:
Preheat oven 350. Cream butter and erythritol. Beat in eggs one at a time. Set aside. Mix flour, baking powder, cinnamon, salt. Mix gradually into egg mixture. Fold in carrots, pecans. Spread into cake pans lined with parchment. Bake 30-35 minutes. Cool completely.

ICING - Beat together until smooth. Add a tablespoon or two of cream to thin slightly if necessary.

Note- to make chocolate cake, add about 1/3c dark cocoa. For chocolate icing, add 2Tbsp dark cocoa. Adjust sweetness accordingly.
