6 Red or Yukon Gold potatoes
4 boiled eggs
½ c American cheese slices cut in strips
¼ c sweet pickles, chopped
2 jars of pimentos, drained and chopped
1 onion, chopped
1 T celery seeds
½ c mayonnaise
1 T mustard
Sprinkle of sweet pickle juice
salt and pepper to taste

Directions:
Boil potatoes, allow to cool enough to handle, peel. Working in small batches, cut several potatoes into large pieces. Combine with eggs and cheese so cheese melts. Salt and pepper to taste. Carefully mix in other ingredients so as not to mush potatoes. Adjust all to taste
