4 tablespoons butter
1 large onion chopped fine
1/2 cup apple chopped fine
1/2 cup celery chopped fine
1 1/2 cups water
3 pounds cooked shrimp
2 tablespoons curry powder
1 pint cream
salt and pepper to taste

Directions:
Directions:
Put butter in frying pan. When melted add onion, apple and celery. Simmer, then add water. Let all simmer gently until apple and celery are tender and most of liquid has cooked away. Stir in seasonings, then shrimp and cream. Cook gently until cream is reduced to sauce consistancy. Serve over rice with condiments. Suggested condiments: coconut, chutney, chopped almonds, pickle relish, raisins, ripe olives, crystallized ginger.
