1 bag of angel hair cabbage
1/2 c. thinly sliced scallions, divided
1/4 c. mayo
1 Fresno or Jalapeno chili, chopped
2 T. apple cider vinegar
3/4 t. sugar
3/4 t. pepper, divided
1/2 t. salt, divided
3 T. dark brown sugar
1 T. bourbon
1 T. soy sauce
4-6 oz. salmon fillets

Preheat oven to 400º

Mix first six ingredients plus 1/4 t. salt and pepper. Chill

Whisk brown sugar, bourbon, soy sauce and 1/2 t. pepper. Place salmon in sauce and chill for 15
minutes.

Place salmon and sauce in a preheated oven safe pan and cook for 4 minutes. Place in oven and cook for 7-10 minutes. Serve over slaw.

You can just use Marzetti's slaw dressing or I used ranch dressing. I used 2 Jalapenos and diced them with the seeds.
