1 large egg
1 stick of butter, soften in microwave if not at room temperature
1 c. sugar
1/2 t. kosher salt
1t. baking soda
1/4 c. cool water
2 c. flour
3-4 ripe bananas, mashed, approximately 2 cups

Directions:

Preheat oven to 325º, grease and flour a loaf pan.

Cream butter and sugar with a wooden spoon or mixer. Then, add egg and mix until fluffy. Dissolve salt and baking soda in water, then add to butter mixture. It will look ‘lumpy’.

Stir in flour, then mashed bananas.

Pour into prepared pan. Bake 1-1 1/4 hour, turning pan after 30 minutes.
Bread is done when a toothpick comes out clean.

Everyone makes this recipe differently. Aunt Kath makes two smaller loafs, Uncle Mike usually adds choloclate chips. I like to use 3/4 cup sugar, melt the butter before mixing, and use 4 medium to large bananas. I like the larger ‘crown’ on top when you only make one loaf. Try it and see what you come up with!
