Ingredients: 1 Onion, chopped 1 stalk Celery (1/3 c.), chopped 1/2 Red Bell Pepper (1/2 c.), chopped 1-2 Carrots (3/4 c.), chopped 2 cloves Garlic, minced 2 lg Sweet Potatoes (1-1/2 lb total), peeled and chopped 1-2 T. Gingeroot, minced 1/2 tsp. Cumin 1/8 tsp. Cayenne Pepper 1/8 tsp. Nutmeg 4 c. Chicken Stock Salt and Pepper to taste 3 T. Peanut Butter 1/2 fresh Lime

Directions: |
Directions:Sauté onions, celery, red bell pepper, and carrots 4-5 minutes. Add garlic and continue to sauté for 1-2 minutes. Add gingeroot, cumin and cayenne pepper, and cook 1 minute longer. Add sweet potatoes and chicken stock. Bring to a boil. Reduce heat and simmer 10-12 minutes, until potatoes are just tender. Add nutmeg. Stir in peanut butter. Season with salt and pepper, if desired. Squeeze in juice of 1/2 fresh lime and stir. May ladel into bowls at this point, or purée with an emulsion blender (or good processor), before serving. Swirl each serving with sour cream. Top with crushed peanuts and/or a sprinkle of minced green onions. Serve with hot sauce. |
