3/4 c. Italian dressing
2 lbs. boneless beef chuck eye roast, cut into 1" chunks
6 slices bacon, chopped
1 large onion, chopped
3 c. sliced mushrooms
3 c. sliced carrots
3 medium potatoes, peeled, cut into large chunks (about 1½ pounds)
1 can (14.5 oz.) stewed tomatoes, undrained
1 can (14.5 oz.) beef broth

Trim excess fat from meat and cut into 1" chunks. Place beef and dressing in a large resealable plastic bag and refrigerate for 30 minutes to marinate. Cook bacon for 5 minutes or until crisp and set aside. Add onion and mushrooms to a large pot or Dutch oven. Cook on medium-high heat for 10 minutes or until softened. Remove beef from marinade and discard marinade. Add beef, carrots, potatoes, tomatoes with their liquid, broth and bacon to pot. Bring to a boil, stirring occasionally. Reduce heat to low and cover tightly. Simmer (do not boil!) for 1 hour and 15 minutes. Uncover; continue to simmer 15 minutes or until meat is tender and sauce is thickened, stirring occasionally. Makes 8 servings.
