1 gal Cucumbers sliced into ½" pieces

Soaking Brine: 2 cups Pickling Salt
16 cups Water
Plain Water Soak: 4 qts Water
Pickle Solution: 1 cup Vinegar
2 cups Water
1 tsp Alum
Sweet Pickle Brine: 2 cups Vinegar
2 cups Water
8 cups Sugar
1 tsp Turmeric
1 T Pickling Spices, tied in a bag
Green Food Coloring


Directions:

Step 1: Bring soaking brine to a boil and pour over cucumbers in a crock. Cover with a clean cloth and weigh
down with a plate. Cover crock with a clean towel. Let stand 3 days.
Step 2: Drain, put back in crock, and cover with fresh water. Cover and let stand for 2 days.
Step 3: Drain and place back in crock. Bring pickle solution to a boil, simmer for 2 minutes, and pour over
cucumbers. Cover, and let stand overnight.
Step 4: Drain and place back in crock. Bring Sweet Pickle Brine to a boil and pour over cucumbers. For 2
days, drain this syrup into a large pot and bring to a boil, then pour back over the cucumber slices. Add
food coloring as desired. On the third day, once again bring syrup to a boil. Put pickles into sterilized
jars, cover with hot brine, and seal.
