1 cup persimmon pulp
1/2 tsp soda
1 cup sugar
1/2 cup butter or margarine
1 egg
2 cups flour
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
*optional: nuts, raisins, or coconut

Directions:
Directions:
Mix persimmon pulp and 1/2 tsp. soda together and set aside. Cream sugar and butter until blended. Add 1 beaten egg to sugar blend. Sift dry ingredients together.. Add dry ingredients and persimmon mix alternately to sugar and butter. When well mixed you may add nuts etc. Drop by rounded teaspoon on greased cookie sheet and bake at 350 degrees until brown about 10-12 min.
