One double piecrust- frozen dough OK
Pumpkin filling
1 15 oz. can pumpkin
2/3 brown sugar
1/2 tsp. cinnamon
1/2 ground ginger
1/2 cloves

Pineapple filling
15 oz. pineapple (blend 1/2 and cut remainder into small pieces)
1/2 cup sugar
1 TBSP Corn Starch

. cook over med. heat until reduced and liquid is clear. Cool before filling

Savory empanadas can be made with seasoned meat filling.

Roll out dough and cut into 6 inch circles . Fill with filling of choice. Moisten edges with water. Fold over and crimp edges with fork. Brush with egg wash and sprinkle with Turbinado corse sugar. Bake 435 degrees until golden brown (about 15 min.

*Note: A savory empanada can be filled with a seasoned meat such as hamburger. ground chicken, onion, green chili, etc.

The only desserts I can remember Grandma Nina making was rice pudding, bread pudding, empanadas, and "poor man's cookies"( fried tortillas sprinkled with cinnamon sugar. She did make pumpkin pie at Thanksgiving.
