2 envelopes Knox Unflavored gelatin
1 c. sugar
¼tsp. salt
2 egg yolks
1 c. milk.
1 tsp. grated lemon rind
3 c. small curd cottage cheese or ricotta (24oz.) sieved
1 TBSP. lemon juice
1 tsp. vanilla flavoring
2 egg whites, stiffly beaten
1 c. heavy cream whipped

Crumb Topping:
Mix 2 TBSP sugar
½ c. graham cracker crumbs
½ tsp. cinnamon
¼ tsp. nutmeg.

Mix together:
1. gelatin, sugar, salt in the top of a double boiler.

Beat together:
1. egg yolks and milk.
2. Add to gelatin mixture. Cook over boiling water, stirring constantly until gelatin is dissolved and mixture thickens-about 10 min.

Remove from heat:
Add grated lemon rind. Cool mixture

Stir in: cottage cheese or ricotta (24oz.) sieved. lemon juice, and vanilla flavoring.
Chill, stirring occasionally until mixture mounds slightly when dropped from a spoon.

Make crumb topping as follows: Mix: sugar, graham cracker crumbs, cinnamon, nutmeg. Set aside.

Fold in: egg whites, stiffly beaten and heavy cream whipped, into chilled gelatin mixture.

Turn into 8" spring form pan and sprinkle top with crumb mixture. Chill until firm.

If desired,use a 8" or 9" square pan, or a 9 x 5 loaf pan. Line pans with wax paper and press crumb mixture in bottom.
