20 lbs Cucumbers
2 to 3 bunches Fresh Dill
1 3/4 Cups Canning Salt
3/4 Cups Whole Pickling Salt
2 1/2 Cups White Vinegar
2 1/2 Gallons Water
5 Gallon Ceramic Crock

Directions:
Directions:
Slice cucumbers to desired thickness. Put 1/2 spices and dill into bottom of crock. Fill crock with cucumbers to 2 to 3 inches from the top of crock.
Mix Vinegar, salt and water and pour over cucumbers.
Place a heavy plate over top of cucumbers to keep them submerged.
Cover with clean cloth or lid. Keep at room temperature.
Remove scum daily when fermenting begins.
DO NOT STIR.
In approximately 3 weeks, when pickles have reached desired olive green color, pack in hot sterilized jars. Heat original brine and pour into jars covering pickles.
Process in water bath for 15 minutes
