Salad Ingredients:
6 cups shredded cabbage (red and green combo)
1 cup matchstick carrots
½ cup sliced green onions
⅓ cup chopped cilantro
⅓ cup sliced red peppers (optional)

Dressing Ingredients:
⅓ cup creamy peanut butter
2 Tbsp. fresh lime juice
1 ½ Tbsp. rice vinegar
1 ½ Tbsp. soy sauce
2 Tbsp. honey
1 ½ Tbsp. brown sugar
1 ½ tsp. sesame oil
1 tsp. sriracha (hot sauce)
2 tsp fresh ginger, minced
1 clove garlic, minced
Sesame seeds

Directions:

Combine all salad ingredients in a bowl and toss. Whisk together all dressing ingredients in a bowl. Pour dressing over salad just before serving, or serve separately if not planning to eat it all in one setting.
