Boil 6-8 potatoes in skins until tender. Peel and slice.
1 medium onion, chopped
2-3 stalks of celery, chopped
1/2-1 green pepper, chopped
Dried parsley flake
Salt, pepper, sugar
5-6 slices of bacon
1 tsp flour, 1/2 c vinegar and 1/4 c water.

Preheat oven to 350º.
In a large, greased casserole dish, put a layer of potatoes; sprinkle with onions, celery and green peppers and parsley. Sprinkle with salt and pepper and sugar.
Continue layers until ingredients all used.
Cover and let sit 2-3 hours.
Cut up 5-6 slices of bacon and fry until crisp. Remove bacon, cool and break into pieces. Sprinkle pieces on top of potatoes.
Add the flour, vinegar, and water to the bacon grease; bring to a boil, then pour over the potato mix and mix well.
Bake about 30 minutes or until heated throughout. Serve warm.
