2 tbsp butter
1 tbsp olive oil
1-2 tsp chopped garlic
3 tbsp minced fresh parsley
zest of 1 lemon
12 oz pappardelle noodles, cooked al dente
1/4 tsp salt
1/4 tsp pepper

Directions:
Directions:
1) Heat butter and olive oil in large nonstick skillet over medium heat. When hot, add garlic and stir to cook for 30 seconds,
2) Add parsley and stir it in
3) Add the lemon zest and stir
4) Cook and stir for 1 minute
5) Add the cooked pasta, sprinkle with salt and pepper, and toss to coat the noodles.
*Optional: stir in 1 cup parmesan shavings at the end. You can also splash in a little heavy cream to make the noodle dish more creamy.

I also skirt in a bit of lemon juice. Simple, fresh flavors - delish! Great to serve with picatta as well.
