5 or 6 All-purpose Medium Potatoes
Cider vinegar
3 Hard boiled eggs, chopped
2 medium onions, finely chopped
1 small can (6 oz?) Peas & Carrots
2 Dill pickles, chopped (Clausen)
1 bunch scallions, finely chopped
2 tablespoons drained capers
½ lb. Ham, cubed (½ package of Hormel smoked Canadian bacon works ok)
Mayo to taste

Directions:

Place cold water in a large pot.
Peel potatoes, cut in half, cut in strips, and then cubes. Place in cold water.
Strain out water and add clean water to cover potatoes plus about an inch.
Cover lightly, heat pot to boiling, and cook for about 10-15 minutes. Test with thin fork, should be cooked but still firm.
Strain potatoes in colander and let cool for a few minutes.
Place colander over pot and sprinkle cider vinegar over potatoes. Do this about three times, letting potatoes rest a bit between.
Taste
Add all other ingredients.
Mix carefully not to mash potatoes
