2 lbs. flour + 3 tbl. four set aside

Put flour in the middle of a work surface. Grandma always used a large board. Marble work surface works too.
Make a well in the middle of the flour. Put the eggs and ricotta in the middle of the flour and kneed until dough comes away dry from your fingertips. Add the extra flour until "tight."

Roll a "ring finger"sized roll of dough and cut into one inch pieces.
On a lightly floured surface, take two fingers and press into the center of the one inch piece and quickly push and pull towards you to make the dough wrap around the top of your fingers. There should be a pocket of air in the middle of each.

If you work with the dough too much you will make "bullets." If you don't get the air pocket right, you will also make "bullets." GOOD LUCK! Can be frozen after making or cooked right away. Cooking will be done when the pasta rises to the top of the boiling water. Overcooking will cause them to fall apart.
