4 eggs - separated
1/4 C brown sugar
3C pure pumpkin purée
1 1/2 tsp cinnamon
1 1/2 tsp ginger
1/4 tsp nutmeg
Pinch cloves
1/2 tsp salt
1 1/2 C milk (2% or homo)

Directions:
Directions:
Separate eggs.
Mix sugar, egg yolks, pumpkin and spices together. Blend well with whisk.
Gradually add milk.
Beat egg whites until stiff peaks. Fold in to pumpkin mixture. Gently combine.


Pour into 2 unbaked pie shells (8” or 9”)

Bake 425º for 10 minutes. Reduce heat to 325º and continue baking 50-55 minutes until custard is set.
