Ingredients: 1 tablespoon olive oil 1 large garlic clove (minced) 1 onion cut very thin 4 cups rice 1 large can tomato sauce 1 small can tomato paste ½ teaspoon cumin ¼ teaspoon chilli powder (to taste) ½ teaspoon paprika 1 teaspoon garlic add black pepper

Directions:Put oil in the pan and get skillet hot... Frannie always used a cast iron skillet for this dish Wet the rice and place in the skillet - stir until rice browns (don't leave or rice will burn easily) Pour the tomato sauce and paste over the rice and cover with water - stir just till combined Add the seasonings - cover with the thinly sliced onion rings. Cook over medium heat and then turn the heat down to simmer... check the bottom of the pan to make sure it is not burning every so often. Takes about 20 minutes for the rice to get done. |

Notes: Frannie was my mother in law and made rice with everything... she always said to stir as little as possible while cooking. She married Rudy very young and was kicked out of her family for marrying a Mexican man. Rudy's mom took her under her wing and taught her how to cook. The first time I met her I had to eat my eggs with a tortilla - no silverware - what a mess... We all loved Frans' cooking. It was sooo funny how the Hispanic women all emotionally competed to make the best rice and criticized every other woman's rice. At picnics rice was always there... and you would always hear the women ask... " who made the rice?" ... and there was usually some whispering going on about the taste of the rice - what a hoot... some of the women added peas to their rice. The Martinez family are known for their many family gatherings... I loved that. We spent a lot of time at family gatherings.
